My comment:

Bezeichnung (auch Rototank) für einen querliegenden trommelförmigen Gärbehälter, der vor allem bei Gewinnung von Rotwein verwendet wird. Entweder wird der Behälter selbst oder ein Stab mit daran befindlichen Schaufeln in Drehung versetzt. Dadurch wird während der Maischegärung die Maische durcheinander gemischt, eine hohe Extraktion der Phenole (Farbstoffe, Pigmente und Tannine) erreicht und außerdem auch die Gärung beschleunigt.
