In our society, where almost 1/3 of the global production ends up in a rubbish bin annually, surplus food redistribution is considered one of the most strategic tools to reduce food waste. However, based on the literature, some criticalities on surplus food recovery and redistribution processes made some authors raising critics about the real benefits of food redistribution. Additionally, the percentage of surplus food recovered from canteens and supermarkets in urban areas is dramatically low compared to the one registered in the upstream food supply chain and there is limited literature about effective surplus food redistribution projects in the cities.
