My comment:

hier: “nachschwitzen” i.S.v. “ noch einmal anschwitzen” ?
Präfix “nach-“ = noch einmal, wiederholend, zeitlich folgend

possibly: to re-sweat, i.e. focussing on "nach-" in the sense of to sweat the slices "once again"

OR optionally:

“then to sweat the pumpkin slices once again in olive oil”
