Context:	Yes, I know what Quark is but in translating a book for anglophones which is related to nutrition and things like "curd" will not make sense to them. Any ideas?

My comment:

Quark is actually gaining in popularity in the US, mostly in the north eastern part of the country (Vermont etc.). I have actually seen Quark in American magazines and the substitute of Greek Yoghurt is always suggested if one cannot find Quark.
Wikipedia suggests curd cheese or cottage cheese but neither one is really correct.
I would leave "Quark" and then add in parentheses (similar to Greek yoghurt/cottage cheese) etc.
