The complete context would provide better insight, e.g. if it is hot outside, then from inside one might observe "humidity penetrates the window pane" but if it is raining outside, then "dampness has permeated the window" or if it is cold outside and frost appears on the interior side of the glass then "moisture collected on the glass."

I would not use humidity ... humidity is used in regards to moisture in the air, i.e. "it's very humid today" or "the humidity is at 80% today" ... etc.
