My comment:

I assume that
"stoper" comes from " stope" (Abbauort / Strosse) bzw.
"to stope" (erzführendes Gestein stoßweise abbauen)

"to stope overhand" =
einen Firstenstoß / Firstenbau abbauen

"to stope underhand" =
einen Strossenstoß abbauen"
