in the context given, the correct term would be soybeans (pl.) not soybean; thus, "the purchasing of soybeans in Mexico".

I agree, because, in addition to the plural argument by Sylvia, and my own feel for the language, the imagery from the "context" is that of many beans. One bean a buy does not make.
