openwork sugar

My references:

openwork sugar
Explanation:
Not fundamentally different to the other proposals so far, but it does have the merit of being an "official" translation on the Coupe du Monde de la Patisserie site in respect of Gabriel Paillasson who invented the technique :

He is the initiator of several new professional techniques such as:
- chain saw ice sculpting,
- bubble sugar,
- carbonic sugar,
- OPENWORK SUGAR,
- sugar in 90° proof alcohol,
- Chocolate sprayed with CO².

openings in the sugarwork

My comment:

He had created a floral arrangement with pulled sugar flowers and leaves.
...at the front of the base. He had also decorated the back part of the piece, artfully arranging sugar flames represented by openings.
