Occupation: professional baker

My comment:

or maybe:
apprenticed profession: baker

It's diffcult to convert the German-style descriptions into English (or other languages)

Another dictionary pick-and-mix. Vocational is a term widely used in English, but vocation is literary/archaic, and is not used as a synomym for profession.

occupation requiring formal training

My comment:

bakers in Germany are apprenticed for 3 years, during which time they spend a few hours a week in a vocational school and most of the time working in a bakery.

My references:

my father is a baker!
