Biofilmes são complexos ecossistemas microbiológicos embebidos em uma matriz de polímeros orgânicos, aderidos a uma superfície (COSTA, 1999; CARPENTIER e CERF, 1993; SURMAN, MORTON, et al., 1996).

O biofilme contém partículas de proteínas, lipídeos, fosfolipídeos, carboidratos, sais minerais e vitaminas, entre outros, que formam uma espécie de crosta, debaixo da qual, os microrganismos continuam crescer, formando um cultivo puro ou uma associação com outros microrganismos. No biofilme os microrganismos estão mais resistentes à ação de agentes químicos e físicos, como aqueles usados no procedimento de higienização (PARIZI, 1998; MOSTELER e BISHOP, 1993
