"The greys" vuol dire di solito "i capelli bianchi/brizzolati", come in "cover the greys" cioè: "tingere".

"A pair of" possono essere soltanto "due", ma di solito vuol dire "alcuni/non molti", cioè più di due.

In English one could refer to 'grey hairs' or 'grey hair', even 'the grey'. However, if one were to refer to (for example) 'covering the grey/grey hairs ' the hairs would always be specified...so never 'a pair of greys' in the context of hairs!! We need more context for this translation, but in the absence of any more information I stand by my hypothesis that the 'greys' are horses, especially in the context of a historical novel. :-D Best wishes, Amanda

My comment:

'A pair of greys' is most likely to be a matching pair of white horses, probably pulling a carriage or coach. [NB White horses are always called 'grey'].
