I agree that more context is needed, especially the part before the sentence you're asking about.
I'm not sure who should be "eating the fruit" - the man who wants to divorce or the cardinal who should accept the bribe?
Anyway, il frutto di quell'ultimo debito is the expensive car for the bribe, apparently bought through a last, desperate debt, when all the rest of the man's fortune is gone.
If the prelate is talking about the bribing man, the sentence could mean something like: "It would be better for him to enjoy the fruit of his last debt in a more profitable way, instead of wasting it in trying to obtain the divorce" (or, maybe, more appropriately in this case, a declaration of nullity or annulment of his marriage).
