My comment:

I think a "débit fer" might be either a piece of metal that has been cut to a particular size, or the cutting process itself. The word "débit" has this meaning of "something being cut" (often timber). So the "nomenclature débit fer" might be a list of those cut sections, perhaps sorted according to their dimensions.
