I think this answer is better. Until a few years ago, I lived in a major metropolitan area and would have said that many (if not most) people knew what flan was. Now that I live in another "less cosmopolitan" area, I have found that most people here have NO IDEA of what flan is. I even have a fifty-something man that I tutor, and he is from Guanajuato Mexico and speaks little English, and he did not know what flan was (go figure!!!) Many people won't know what Creme Caramel is, either, but I think it is a safer bet.

I agree. And if it's for a European text, I agree even more. In UK, Ireland and Australia a flan is a sponge cake with fresh fruit and cream, nothing like Spanish *flan*. For example: www.glutafin.co.uk/en/article.asp?chco_id=442 So, I think Creme caramel is safer.

My comment:

"Flan" is a word known to many English speakers and used in many cookbooks. Custard is the English word, but it is usually different from "flan". (Custard is less creamy, may be flavored with nutmeg, doesn't usually have a sugar syrup sauce, doesn't usually have fruits, nut or coconut added.)
