A breakup analysis of the phrase:
atmana: the soul, spirit
sargo: all of creation, nature itself
jiteh: conquer, overcome

Sanskrit is a language that is more ancient than any other surviving means of human communication. I have known so-called "Sanskrit scholars" arguing heatedly over the interpretation of extracted texts from the Upanishads.

As I declare, I am not very sure that my own interpretation of this motto is the ultimate one, so I offer a few more:
The spirit conquers nature
The soul is supreme
etc
