My references:

the IATE search database gives both "pares monetarios" and "pares de divisas" as viable translations for "currency pairs". My final choice would depend on both the larger context of your document, and on how you've translated other instances of the expression on your document. HTH

Em Pt-Pt é esta a tradução.
"As duas moedas que formam a taxa de câmbio, por exemplo o EUR/USD é um par de divisas."
Neste caso, o plural será "pares de divisas", pelo termo que colocou na questão.
