Context:

The agreement to terminate shall be set forth in a letter from XXX to the Contractor.

Keywords:

It's in a contract for professional services. "Estipular," "establecer," don't make any sense, imho.

Pues si se va a dar aviso de algo por medio de una carta pues se quiere comunicar/dar parte/avisar algo a alguien ¿no?

XXX le comunica a Contractor, por escrito, que desea poner fin al contrato que tenían (y eso lo hace por medio de una misiva o lo que es lo mismo, por escrito).

El contrato de terminación/extinción/etc. (depende del objeto del contrato) deberá recogerse en correspondencia dirigida al Contratante/Contratista (depende del objeto del contrato) por parte de XXX.
