It refers to the content of these magazines. Bouillie means MUSH, a baby or old person eats bouillie (old fashioned term).

To reflect the derogatory tone, and "mash" is close to "bouillie." It looks like the author is not impressed by their contents, possibly taking a potshot at the new age stuff?
