The usage of "anc" as "antigos" will always depend on the context, but is not usual. If you are talking brewery, you are probably dealing with fermentation of the ingredients to get the perfect taste and unless they are specifically referring to it within the context of their ancestors' special recipe (in which case it is advisable to use "antigos"), it will be more usual to refer to "mais velhos" (i.e., the older people) as those who would know how to do things (including to brew a good beer).
